no-bake granola bars
They are quick, easy, and you likely have most of the ingredients already in your pantry. These No-Bake Granola Bars are perfect for mornings on the go or for mornings on your couch.
INGREDIENTS
Base

2 cups old fashioned oats

1 tbsp ground cinnamon

1 cup nut butter of choice

1/2 cup honey or 1/3 cup maple syrup
Optional Fillings (aim for about 1 1/2 to 2 cups total)

Nuts (peanuts, pecans, walnuts, pistachios, macadamia)

Seeds (sunflower, pumpkin, flax, chia)

Dried fruit (cranberries, mango, pineapple, apple, banana)
-
Sweet fillings (chocolate chips, white chocolate chunks, coconut, butterscotch chips)

Anything else you can think of!
INSTRUCTIONS

Blitz 1 1/2 cups of oatmeal in a food processor. Add to a large mixing bowl with the remaining oatmeal. Mix in cinnamon.

Put nut butter and honey or syrup in a separate bowl. Microwave for 30 seconds and then add to oatmeal mixture.

Mix well until it forms a consistent texture. It should hold together, but not be so wet that it just melts. You may need to add a little more honey if it's too dry and crumbly.

Add 1 to 1 1/2 cups of your chosen mix ins. (Two of my favorite combinations are pistachio and dried cherries or butterscotch chips and macadamia nuts)

Line a 9x9 square baking dish with parchment paper. Press mixture into the dish until it all holds together. Refrigerate for at least an hour.

Remove from the fridge and cut into squares (or just eat the whole thing as one giant granola bar!)
