Ingredients

1 lb boneless chicken breasts cut into strips

1/3 cup water

1 medium avocado, cubed

1 tablespoon avocado oil

1 cup canned corn

1 cup cherry tomatoes

1 tablespoon chili powder

1 teaspoon onion powder
-
1 teaspoon dried oregano
-
1 teaspoon ground cumin
-
1 teaspoon paprika
-
1/2 teaspoon salt

1 teaspoon garlic powder
-
1/2 teaspoon black pepper

2 teaspoons lime juice
-
2 tablespoons chopped cilantro

8 taco shells or tortillas
Instructions

Heat a large skillet over medium-high heat and add oil. Brown chicken and then add water and seasonings. Cook 4-5 minutes until chicken is cooked through.

While chicken is cooking, mix avocado, corn, tomatoes, lime juice and a dash of salt & pepper. Add chicken mixture to shells or tortillas and top with avocado salsa. Top with an additional spritz of lime juice and cilantro. Serve immediately.
