Breakfast Tacos

Makes 2 servings

INGREDIENTS

3 large eggs

6 egg whites

1 cup chopped spinach

2 light Laughing Cow cheese wedges

4 corn tortillas

2 Tbs. salsa

2 clementine oranges

 

INSTRUCTIONS

1. Scramble the eggs and egg whites together with spinach and cheese. Remove from pan.

2. Divide the egg mixture evenly between four tortillas and top each taco with 1⁄2 Tbs. salsa. Enjoy two tacos per serving and one orange on the side.
